How do you cook Lumaconi pasta sauce?
Once pasta sauce is simmering bring a large pot of salted water to the boil then add dried Lumaconi pasta and boil until tender but still al dente. Once cooked drain water and return to the pot with a drizzle of olive oil. Heat a tbsp of olive oil in a heavy pan and fry the chopped spinach with crushed garlic and dried chilli until well wilted.
What to fill Lumaconi with?
Anyway back to my lumaconi! I chose to fill them with quite a rich minced meat filling which also has ricotta and bechamel sauce inside, so a little time-consuming to make. (see recipe below) Of course, you can also make a vegetarian filling fo them with, for example, ricotta and spinach.
